Training Facilities

The Institute invests heavily in training facilities to ensure that students have access to the most up-to-date equipment. This provides a practical edge to their training experience, ensuring they're work-ready upon graduation.

New Angliss Culinary Academy Kitchens

The Angliss Culinary Academy's 2006 building works include two new kitchens with up-to-the-minute fittings and appliances, a coffee training room and a new demonstration room.

The John Miller Kitchen

This state-of-the-art unit training kitchen accommodates 24 students and features stainless steel equipment and appliances including Goldstein commercial ovens. The kitchen boasts a demonstration area with ceiling mirrors so students can see the table from above.

Asian Kitchen

The Institute's dedicated Asian kitchen accommodates 15 students. It features specific Asian cooking equipment such as a Peking duck oven, dim sum steamers and numerous super wok burners.

Training Restaurants

The three training restaurants, including two fine dining restaurants, function as living classrooms.  Interacting with members of the public, Hospitality Management students perfect their front of house, bar operations and function management skills.

Coffee Academy

The Coffee Academy is a contemporary café with outdoor courtyard, featuring four double-group espresso machines, a coffee roaster and eight grinders. For coffee training, please visit the Coffee Academy website or call the Coffee Academy Manager on (03) 9606 2111.

Confectionery Centre and Theatrette

The Confectionery Centre has been designed to support and nurture the needs of the confectionery industry for either training or research and product development purposes. The Confectionery Centre houses a drop roller for manufacturing hard boiled lollies, a warming and cooling table, NID machine (starch printer depositor), a starch mould room, Groen cooker for making liquorice and a Z-arm mixer.

The Centre's latest acquisition is a Sollich viscosimeter, which measures a product's thickness. The Chocolate Room contains an enrobing machine and 40ft cooling tunnel as well as 2kg and 15kg capacity Panning machines. The room is fitted with marble bench tops.  Other items of equipment include a chocolate storage tank and 45kg refiner Conche chocolate system.

The Confectionery Centre and Chocolate Room are available for hire as well as the 116 seat lecture theatre that features the latest audiovisual equipment including an audio loop for the hearing impaired. For more information, contact the Confectionery department on (03) 9606 2111.

Wine Sensory Evaluation Centre

The Wine Sensory Evaluation Centre is a purpose-built training room for wine training and wine appreciation classes. It is ideally set up to cater for 21 students and the design of the room provides individual, partitioned work stations - each with its own built-in spittoon. Wine appreciation classes for the public are conducted here. The Centre can also be used for private events based on availability.

Housekeeping Suites

This is where students learn how to 'dress' a hotel room properly for guests. The three accommodation suites include an en suite, a double bed and a bunk bed.

Reservation Room

This modern room accommodates 22 students wanting to learn Computer Reservation Systems (CRS). William Angliss Institute is one of the few training providers offering a range of CRSs including Galileo, Sabre and Amadeus. There is also a ticketing printer and all computers have slim-line screens.

TAB Training Centre

Personalised training for six students conducted at live training facilities. These include six '2290' TAB selling terminals, two EBT's terminals, Sky Channel, Austext monitors and a Daily Form Service. New Retail Waitering Terminals have recently been installed in the classroom, allowing students to learn a combination of traditional and modern systems.
