Future Trends and Planning Implications for the Hospitality, Tourism and Foods Industries

On 19th September, renowned futurist, strategist and author Dr Peter Ellyard spoke to a networking breakfast at the Angliss Restaurant about future trends and planning for the new century with a specific focus on the hospitality, tourism and foods industries. 

Dr Ellyard's presentation was extremely thought-provoking and asked the audience to strive towards making the future a better place through leadership.  His presentation focussed on the need to create sustainable, mindful tourism, hospitality and food production practices based on creating a total system of 'Wellness'. He encouraged people within these industries to take a leadership role rather than merely managerial role in defining this future both on a local, and more importantly, global scale. He stressed the need for Australians to embrace Planetist Values and then, leading by example, export this knowledge to other developing nations.

Dr Peter Ellyard (BSc.Agr, MS, Ph.D) is currently Chairman of the Preferred Futures Institute and the Preferred Futures Group, which he founded in 1991.  He also chairs the Sustainable Prosperity Foundation and two start up environmental companies. Peter Ellyard has been a Senior Adviser to the United Nations system for more than 30 years including to the 1992 Earth Summit where he was a senior advisor on both the climate change and biodiversity conventions. Of which he was the only Australian and one of only 20 globally. At other times he has been a senior consultant to the UNEP, UNDP and UNESCO. He has also advised the OECD for over 20 years. He is the author of the best selling book Ideas for the New Millennium (1998, 2001) and The Birth of Planetism (to be published in 2007).

Ice-Cream Making Workshop - The Italian Way

Wednesday 19 September

All the way from Italy, master chef and renowned 'Gelato Ambassador to the World', Palmiro Bruschi, added a flamboyant touch of dolcezza when he participated in the Bella Italia festival, held in Melbourne, Victoria.

Palmiro presented his specialty Italian Ice-Cream Workshops at William Angliss Institute of TAFE on Wednesday 19th September, in association with the Italian Chamber of Commerce and Industry and William Angliss Institute.

Ms Pauline Dine, Manager of Short Courses at William Angliss Institute says: 

      "Palmiro has developed an extraordinary talent not only for ice-cream making, but also for communicating the Italian philosophy of ice-cream making that gave him the title of ambassador of Italian ice-cream to the world. His bold gelato flavours are very much a reflection of his exuberant personality and the perfect finish to the master chef's signature dishes."

       Palmiro demonstrated his extraordinary talent in gelato making during two sessions held at the Institute. Participants were introduced to Italian gelato and sorbet making by learning to create simple confections of nuts, vanilla, pistachio, pineapple, strawberry and citrus fruits. 

The second presentation, a more advanced workshop showed participants how to incorporate gelato and sorbet across the menu. Ms Dine adds:

      "They worked through from a traditional gelato Vinsanto (liquor wine) and cantucci biscuits for dessert, to more intriguing applications such as sorbet as an appetiser. They also learnt how to incorporate tomato sorbet with basil to add to pasta and extra virgin olive oil gelato with seafood dishes. We look forward to working with the Italian Chamber of Commerce and Industry to do it again next year."
